Quick and Easy Pasta Salad in the Little Helper FunPod
Being gluten and dairy-free it can be difficult to think of nutritious and yummy dishes to make for our children, and one they will actually eat for that matter. This is a simple yet tasty meal and has been a real winner in our family! Healthy and nutritious and easy to make.

Makes 10 portions
Pack of gluten-free pasta spirals
1 red capsicum
1 can of tinned corn
150g of semi-dried tomatoes
1 cup of baby spinach
8 slices of lean bacon
1 garlic clove crushed
1/2 cup olive oil
1/4 cup apple cider vinegar
1 teaspoons Dijon mustard
sprinkle of salt and pepper
Boil a saucepan of water on the stove, once boiling place your pasta into the pot. Boil for 10-15 minutes until cooked and remove from heat and drain water. Cut bacon into small pieces then add to a fry-pan and cook into nice and crispy, set aside once cooked and drain onto paper towel.
Next cut up the capsicum into cubes and place into a bowl. Drain the fluid from the corn and place in bowl. Cut up semi-dried tomatoes into small pieces and add to the bowl.
Wash baby spinach then cut up into fine threads and add to bowl. Next add the drained pasta spirals to the bowl and stir all the ingredients.
Next put all the ingredients for the dressing into a jar and shake to mix and then pour over the salad.
Will store in the fridge for 3-4 days. Otherwise can freeze into portions for your child’s lunches or dinners. A real winner and is very tasty you will enjoy it too.
