Everyone has a favourite type of pancake but these are mine. Mum always made the best pancakes, they were just the right consistency. There is something so warming about pancakes being cooked for you. It's fun and entertaining, and no-one ever gets too old for them! Growing up on a farm, we wouldn't go out for breakfast or brunches. We would entertain ourselves. This family classic is a much loved recipe and is here to be shared.
Grab the kids and get cooking, they will love it!
1 cup of plain flour (or self-raising if you like fluffy ones)
2 tablespoons of sugar
1 cup of milk
Pinch of salt
Sift your flour and salt into a bowl and then add the wet ingredients.
Mix altogether with whisk or electric beater. Once all combined set aside.
Melt some butter in a frying pan on moderate heat.
Place your pancakes into the size you desire, then flip once they bubble and cook the other side until lightly coloured.
Enjoy with fresh fruit and yoghurt, maple syrup, lemon and sugar or whatever your heart desires.
