Home-made Pumpkin Soup made in the Little Helper FunPod

Our daughter is 18 months and she has a cows milk protein, soy protein and egg allergy. This has made cooking a bit more challenging. However I have approached it by expanding my knowledge on dairy and egg free foods and exploring lots of different foods and recipes. Fleur loves food and so do we, she loves watching me cook and help prepare any meal I am making.
Children love to be helpful to their parents and that's why I encourage her to help. Speak to them and explain what foods we are going to cook. They will love to learn and it will help them understand where the food sources come from for their meals.
Challenge yourself and try something new, it's fun and enjoyable. I have made so many different recipes and failed but it's always worth having a go. Clear the bench and prepare yourself for some yummy treats and dinners ahead. I love cooking and I hope we can create that love for you. This is one of our favourites..
Pumpkin Soup made with the Little Helper FunPod
Vegan Pumpkin Soup
Makes 1.5 litres
Kids cooking level is⭐️⭐️ Kids will need some help as there is use of the stove, they will enjoy interacting by cutting up some veggies.
1 tablespoon olive oil
1 small onion
2 cloves of garlic
1 teaspoon curry powder
Half a grey pumpkin or butternut pumpkin
2 small potatoes
1 tablespoon of powdered vegetable stock
1.5 litres of hot water
Salt and pepper to taste
Cut up onion and crush garlic add oil to a large pot on the stove and place on high. Add the onion and garlic stirring until transparent, then add curry powder until fragrant. Set aside.
⭐️ Suggestion- Set your child up in their Little Helper FunPod with a bowl of their own and let the hold the potatoes or cut-up pumpkin. They will love to feel included.
Cut-up pumpkin and remove skin, peel potatoes and cut into halves. Add to pot. Place stock, salt and pepper and water to the pot and bring to the boil for 10 minutes then return to a simmer for a further 15 mins. Set aside and then puree with an electric wand.
Season with salt and pepper to taste.
