Healthy Banana Bread in the Little Helper FunPod Safety Stand

There is something so warming about banana bread. It's delicious and feels like it's healthy cause there is fruit it it right! When I first had my daughter I would crave it all the time with a strong coffee. Was a good thing it was easy to make because I never had a lot of time. This is a very easy recipe to make and can be re-created with gluten-free flour also as i was trying to eliminate foods from my diet to help Fleur's allergies. There are two recipes in my blog because of this, why not try them both, enjoy and have fun.
Oven temperature 165 degrees
Use a small loaf tin 23cm x 12cm
Ingredients:
2 eggs
1/3 cup coconut oil
1/2 cup brown sugar
1/4 cup milk of choice
1 & 3/4 cups plain flour
1 cup of mashed bananas (over ripe bananas are the best)
1 teaspoon baking soda
1 teaspoon vanilla essence
1/2 teaspoon salt
1/2 teaspoon of ground cinnamon
Method:
Grease and line your loaf tin with Nuttelex Original or a margarine spread, next pop some flour in the tin and pat it around so it covers all the edges of the tin then tip out the excess. Then place some baking paper down on the bench and place the tin on top of it then cut out your baking paper and place in the bottom of the tin.
  1. Into a large mixing bowl add sugar and eggs and lightly beat until smooth.
  2. Sift your flour and baking soda onto some baking paper then transfer into the mixture.
  3. Melt coconut oil in the microwave or stovetop then add it to the mixture.
  4. Mash your bananas and add remaining ingredients to the bowl.
  5. Mix altogether until smooth, then place into loaf tin for cooking.
Bake in oven for 55 minutes.
Once baked remove from the oven and test with a skewer. If the skewer comes out clean its done. (Old-fashioned way to test for baking, but easy and simple, see if there are no sticky parts left on the skewer, if not it's cooked!)
Run a knife around the edge of the loaf then ease out of the tin, it should fall out easily.
Place onto a wired rack to cool.
This is delicious recipe and is so easy to make. Enjoy with a hot cup of tea and your best friends.
