Fluffy Banana Muffins- Vegan
These are honestly the best muffins I have ever made! They are so fluffy and delicious you'll love them. They are fantastic as the banana binds the recipe and no need for a sticky egg replacer. So fluffy they are light and enjoyable.

Fluffy Banana Muffins
Oven 175 degrees
Makes 24 Muffins
Ingredients:
3 cups self-raising flour
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon mixed spice
1/2 teaspoon salt
1 cup coconut milk
3/4 cup of oil (can use any oil) I use coconut
2 cups of mashed banana
Method:
- Mix altogether in bowl and apply to mix-master and mix together until smooth. Mash your bananas with a fork and apply to mixture.
- Spoon generous amounts into patty pans and bake in over for 15 mins.
- Once cooled remove from tray onto a wired rack and let cool.
- Enjoy. Should stay fresh for 3-4 days, otherwise great to freeze.
