My go-to recipe when was having a girlfriend over for a cuppa are these dairy free muffins, they are delicious. You can mix up the fruit so your friends don’t get sick of them. I have always loved cooking since I was a girl so I find it very rewarding sharing that love with my daughter. Before I discovered the FunPod I would have my daughter in the baby carrier as I cooked, and I knew she would one day share the love of cooking with me. Happy cooking and enjoy.
Dairy Free Muffins
Makes 12 muffins
Oven Temperature 200c

Ingredients:
1 & 1/2 cups plain flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup brown sugar
1/4 cup sugar (raw or any kind)
2 teaspoons of lemon juice or apple cider vinegar
3/4 cup almond milk
2 eggs (or egg replacer)
2 & 1/2 tablespoons coconut oil
1/2 teaspoon cinnamon
2 cups of frozen raspberries or blueberries
Method:

Grease a 12 pan muffin tray or use patty-pans.

Sift your flour and baking soda into a large bowl.

Add rest of dry ingredients to the bowl.

Melt the coconut oil and add to mixture.

Mix up eggs from egg replacer if required and make sure there are no lumpy parts.

Slowly add almond milk and lemon juice. Next mix on high with electric beaters.

Then lastly add in the frozen berries and fold through the mixture. Place into patty pans evenly. Save some berries to place on the very top to look extra pretty.

Transfer to the oven and bake for 22 minutes. Remove from oven and let cool in tray then transfer to a cooling rack.
